Richard Jones has been a part of business in one form or another aside from being in the ministry.

He and his brother have their own company School Days Merchandising, which was founded in 1996.

So when the young entrepreneur was thinking of his next venture he didn’t have to look long for an opportunity.

Wetumpka does have its fair share of restaurants, but Jones noticed one type of food establishment which was missing.

“I always thought Wetumpka was a perfect place for a chicken finger place,” Jones said. “So I started looking around town.”

In a few weeks, Jones idea will come to fruition when RJ’s Chicken Fingers opens.

RJ’s Chicken Fingers is located at 4666 U.S. Highway 231, which used to be Old Mexico.

“I bet my kids and I go out at least three times a week, and more times than not we are going to get chicken fingers,” Jones said. “Wetumpka has such a big population not to have a chicken finger place.”

Jones hopes to open the restaurant by mid-June.

RJ’s Chicken Fingers will offer fried and grilled chicken fingers with hand-cut fries and cole slaw.

The restaurant will also offer some vegetable sides like green beans and black-eyed peas.

It will offer sandwiches, wraps, salads and chicken wings.

And to top the meal off, Jones will offer his mother’s homemade fried apple pies.

“They are out of this world, and I’m not just saying it because I’m her son,” Jones said.

As the business grows, Jones said he hopes to put in a drive-thru as well as offer breakfast.

“We want to be as family friendly as we can be,” Jones said.
